Kencur is also known as ‘Aromatic Ginger’ or 'Resurrection lily', has flavor similar to ginger but is more delicate and fragrant except with a very bitter aftertaste. Used mostly in Szechuan and Balinese curries, stir-fries, soups. Should be used sparingly.
