Gum Arabic is a gum/ hardened sap, harvested from the Acacia tree or Babool tree. It is edible, slowly soluble in water. When soaked in water it dissolves on its own and when fried in hot oil it puffs up like popcorn.
Used primarily as a stabilizer, emulsifier and a thickening agent in the food industry and soft-drink industry. Also helps prevent sugar crystallization.
Used in icing, fillings, chewing gum, bakery, sweets & confectionery, in soft drinks, and snacks. Usage: 3-30% depending on application.
Also used to lower cholesterol, provides strength and nourishment and treat digestive issues.
