Gellan gum is a hydrocolloid used as a thickener, emulsifier, and stabilizer.
Low-acyl Gellan gum is perfect for creating beautiful fluid gels and it forms clear, brittle and non-elastic gels.
Gellan gum acts as an anti-settling agent in liquids, while creating a very light viscosity. Low-acyl Gellan has been having a clean mouthfeel described as "creamy" as well.
It soluble in hot or cold water and Hydrates between 167-203°F/75-95°C, Gels from 50-122°F/10-50°C, Melts from 176-284°F/80-140°C and heat stable.
Low-acyl Gellan is not freeze/thaw stable.
