Egyptian Spice Mix
(Egyptian Baharat)
Gives a mild, delicate aroma & rich flavor to all Egyptian cuisines including meat & vegetable stews, soups, salad, lentil, grains, fava bean dishes and as a dry rub for grilled / baked meat, poultry or fish. Can also be used as a seasoning for Egyptian rice stuffing.
Ingredients:
Coriander, Cumin, Nutmeg, Cinnamon, Cardamom, Rose Buds, Ginger, Allspice, Cloves, Black Pepper.
Recipe to prepare grilled chicken:
Mix 2tbsp yogurt, 2tspsalt, 2tsp Egyptian spice mix, 2tsp lemon juice and 2tsp vinegar in a large bowl. Put 2 pcs chicken breast cubed into bowl, mix, cover and refrigerate. After 2-3 hours thread the chicken cubes on to skewers alternating with chopped onion.
Place skewers on preheated grill and cook for 10-12 minutes, turning occasionally, until chicken cubes reaches 165°F. Remove from heat and serve garnished with tomato slices, green pepper rings, onion rings and mint.
