Sodium Polyphosphate (Na5P3O10)

It is the sodium salt of the polyphosphate penta-anion, used as additives in various foods, including meat and fish products, bakery goods and dairy products.

It improve binding properties, reduce moisture loss in cooking and thawing, reduce rancidity and improve the appearance, also extend shelf life.

Normal usage in meat products is 0.2-0.3%.
