Cracked / Split Mustard Seed ( Brassica alba), also known as Rai Kuria or Mustard Dal, is the cracked (Split) mustard seeds with the skin removed. Has a fresh clean aroma and a pungent biting flavor. Split Mustard Seeds is an excellent preservative and can be substituted for dry mustard powder in some salads, stews and spice rubs. Rai kuria is the life and soul of all indian pickles, gives the special tangy taste, especially the mango pickle.
