Food grade Methylcellulose (HPMC) water soluble polymer, is a high-quality grade that offers a low viscosity for high binding applications.

Unlike other gelifiers, Methylcellulose gelifies when heat is applied. When cold it acts as a thickener.

Semi-firm gel forms at 58-64ºC with E19. It has a low viscosity of 19 cP in 2% solution compliant with food standards.
