Aji Panca, the most common types of aji in Peru, grows mainly in the coastal regions. It has a thick flesh that matures from a green to dark red in color. Aji Panca is mild in heat intensity (a heat level of 2 on a scale of 10 and 500- 1,500 Scoville Units) and provides a smoky berry flavor with fruity overtones adding up to an aromatic taste with a mild lingering heat.
